Ham and Egg Omelette Cups

Portable Omelettes

These little babies are basically portable omelets!


Makes 1 dozen

12 Eggs
12 Pieces of sliced ham
1 teaspoon olive oil
1/8 cup chopped onion
1/8 cup diced peppers
1/4 cup shredded cheese
Mrs Dash Original Blend seasoning


  1. Preheat oven 350°
  2. Grease muffin pans with cooking spray or butter
  3. Line each cup in the muffin pan with a piece of ham
  4. Sautee peppers and onions in olive oil
  5. Put 1 teaspoon of pepper and onion mixture on top of the ham
  6. Add Mrs Dash (or salt and pepper) to taste
  7. Crack 1 egg in each cup (if using scrambled eggs, fill to just under the rim)
  8.  Bake at 350° for 30 minutes
  9. Sprinkle cups with cheese and return to oven until cheese is melted

Serve with salsa or buffalo wing sauce

These store well in the fridge and can be frozen
